This is the frosting that I use on all of my buttercream cakes. The cream cheese in it not only adds good flavor, it also makes the consistency especially creamy. It smooths easily and still crusts in the refrigerator for easy crumb coating and transporting of cakes. This pipes well, smooths flawlessly, and tastes great. On top of all of that, it’s also easy to make! If you aren’t a fan of cream cheese, it can be omitted with no other alterations to the recipe- but do yourself a favor and try it!
1 cup butter, salted
4 ounces cream cheese
4 cups powdered/icing sugar (sifted is best, but not a deal breaker)
1-2 teaspoons vanilla extract (to taste. I prefer 2 tsp)
Heavy cream for thinning
Beat the butter
Place softened (but not warmed) butter and cream cheese into a stand mixer. Beat on medium speed until it is light in color and takes on a totally smooth texture. You DO NOT want lumps.
Add the sugar
Add half of the powdered sugar, one cup at a time. Beat on low speed (otherwise your entire outfit and kitchen will have a lovely powder coat) until incorporated.
Add your vanilla extract- I love a healthy dose of vanilla because I love the flavor of it to really shine. If you want to go more understated, err on the side of 1 teaspoon. Mix in on low to medium speed. You could also get creative and choose a different flavoring option like almond, peppermint, cherry or any other extract that goes well with your cake
Add cream if necessary
The cream is really optional, especially if you are using the cream cheese in the frosting. If you omitted the cream cheese, you will probably find that you need a little cream to give the frosting a smooth and spreadable texture
Add the remaining sugar
Add in your remaining sugar just as above: low speed and one cup at a time. If your icing seems too thick, add a tablespoon of heavy cream and beat it in on medium speed. Frosting should be easily spread, but not at all runny.
You’re all done! This makes excellent fillings and beautiful decorations on cakes and cupcakes. You can also spread it on sugar cookies for a quick and delicious dessert. I hope you enjoy it as much as I do!
